Karim Khouani

Karim Khouani grew up in the sun-soaked city of Marseille, where early memories in his grandmother’s kitchen sparked a lifelong love of food. At Texture, his cooking is rooted in the French tradition — guided by the seasons, shaped by classic ingredients, and reimagined through a Nordic lens.

Karim’s career has taken him through top kitchens in France and England, including under Marco Pierre White, before love brought him to Sweden. In Malmö, he opened Restaurant Ambience, earning a Michelin star in 2015, followed by Restaurant Sture, which received its star just three months after opening.

With over 30 years in the industry, Karim now leads the team at Texture with quiet passion — coaching, guiding, and cultivating a creative and supportive kitchen culture.

ALBERT DALUM

With a deep passion for hospitality and an unwavering drive, Albert Dalum has established himself as one of Denmark’s brightest young talents in the restaurant world. For him, one thing matters above all: that every guest feels truly welcome at Texture.
“We want our guests to relax and be themselves — whether they’ve dined at a hundred gourmet restaurants or it’s their very first time. I love seeing people unwind and share a laugh together.”
Guided by this philosophy, Albert leads his team of waiters and sommeliers, creating a warm and attentive service experience that always meets the guest at eye level.

Erin Sykes

Originally from the United States, Erin Sykes has been part of the Texture team from day one. With a calm presence, sharp intuition, and exceptional culinary talent, she leads the kitchen with quiet authority and unwavering focus. Her passion lies in seeking out the best seasonal ingredients and presenting them in a way that is both respectful and refined.

“Every day, we strive to uncover the soul of each ingredient — to understand it fully and share it with our guests in the most honest and flavourful way. Our goal is a perfect balance of elegance and depth in every dish.”
